Stilton Cheese, Walnut & Pea Tea Sandwiches

6 oz. English Stilton cheese 1 ripe pear 2/3 cup walnuts, toasted 8 slices of whole wheat sandwich bread 4 tablespoons unsalted butter, softened 1 teaspoon chopped fresh tarragon or chervil 1 small shallot, chopped finely salt and pepper springs of fresh parsley

Core the pear and slice thinly. Toast the nuts in the oven, and finely chop. Crumble the stilton, and place in a bowl. Add the chopped nuts, and mix to combine. The mixture will be very crumbly. In a separate small bowl combine the butter with the shallots and herbs. Mix well. Spread the bread slices with the herb butter. Divide the cheese-nut mixture among half of the bread slices. Spread evenly. Lay the sliced pears on top. Press the remaining bread slices on top to form 4 sandwiches. Trim off the crusts. Cut each sandwich into 4 triangles. Place sandwiches onto a serving platter. Garnish platter with springs of parsley.
